The wild popularity of the Atkins, South Beach and other low-carbohydrates diets led many people to believe that carbs are " bad ", the source of unflattering flab and cause of the obesity epidemic.


That' s a dangerous oversimplification, on a par with " fat is bad ". Don' t be misled by the blanket pronouncements on the dangers of carbohydrates; they are an important part of a healthy diet.
Carbs provide the body with the fuel it needs for physical activity and for proper organ function.

PASTA MEALS AND THE MEDITERRANEAN DIET

Pasta has a low glycemic index, so it does not cause sugar in the blood to rise quickly.
The glycemic index measures how rapidly a carbohydrate triggers a rise in blood sugar; the higher the number, the greater the blood sugar response.
Pasta meals are central to the Mediterranean diet; the New England Journal of Medicine reported that the Mediterranean diet reduces the risk of death from heart disease and cancer.
